Sharpening stone or chefs steel?
Which would be better for sharpening a pocket knife, a stone or a chefs steel (the long steel rod)? I would guess a stone, but how come? Is it a really significant difference? What about a bench stone, like this http://smithsedge.com/products/product.asp?id=24&cid=1 ? I ask because I am wondering if I should go out and buy a stone when I already have the steel and the sharpener shown in the link. Thanks in advance.
The best way these days is with a diamond sharpener. Get one in cheap shops...the ones that usually have a load of plastic pots and stuff outside. Look in the tools section and you'll find flat ones or round ones for a dollar or two around three inches long and easy to carry with you. They do a nice job. Most have a course and fine section and they last for years on end.
There are some around six inches long and a couple of inches wide that are less common but are good for big stuff like long straight-bladed scythes and hedge cutters.
I keep a small one in my fishing bag for sharpening hooks and the filleting knife. Does a fine job, better than my old stone and weighs less than a box of matches.
Another in the kitchen for the knives and cleavers, and a selection of them in my workshop.
You can also get different types of diamond knife sharpeners in DIY stores for around $3 or so upwards...£2 in UK.
