Anyone recommend a great set of kitchen knives?
Looking for something stainless steel and long lasting.
Joshua - Shouldn't you be in school? What are you, 12?
Honestly, most of the sets out there (block + an assortment of knives) are not great quality. Especially, do not fall for the "never needs sharpening" scam... I did, before I knew better. They were really poor quality.
Instead, take the money that you would spend on a set, & get 1 or 2 quality knives. Yes, they are expensive, but they are ~*SO*~ worth it! And when you look at the price of buying an entire set, it might not end up costing you much more to just get a really wonderful knife.
After a scary experience with my old "forever sharp" knives (trying to cut up a potato & fearing I'd sever a finger), I finally realized I had to do something. I educated myself about knives, blades, sharpening, etc. Then I bought 2 Wusthof knives: one chef's knife (big), & one paring knife (small). Oh, & a honing rod. Since I got them together, I did get a package deal.
The difference is AMAZING! The weight & balance of the Wusthof makes your work so much easier & safer, not to mention having a truly sharp blade. Slicing tomatoes, formerly a nightmare, now actually excites me, because good knives glide right through. I actually get excited every time I pull the knife out of the block, LOL. I even bring my knives with me (wrapped & packed carefully) when I visit friends or family... can't imagine prepping without 'em!
To be honest, I hardly even use the paring knife, because the chef's knife is so fabulously versatile. The guy who sold them to me told me this would probably happen, & mentioned I might not really need the paring. I doubted him then, but turns out he was right! So if you're on a limited budget, just invest in one great chef's knife. I'm confident my Wusthofs will last me for decades, & may even get passed down.
Try out different brands to see which feels best in your hand... Wusthof & Henkel are 2 notable brands, & there are also some Japanese brands that are becoming more popular. Go to a Williams-Sonoma store if there's one near you. They sell a wide assortment of quality knives, & that's where I got mine. But if you find a better deal online for the same knife, you can still go to the store to see what it feels like first. Don't buy a knife until you feel it in your hand.
Sorry for the novel, LOL... but since I've learned about this subject, it's become a passion. A good knife is the single most important investment for your kitchen (imho). Also, learn about honing vs. sharpening (both are important, but do different things). Alton Brown does a wonderful visual explanation of blade science on his show Good Eats: http://www.youtube.com/watch?v=lRUYAgrsoLw
Best of luck to you, & happy chopping!
