How do professional chefs sharpen their knives?

I'm a home cook. I just purchased an 8-inch Shun Elite chef's knife. I'm tired of always having Sur La Table sharpen my knives (Henkels, Wusthofs, and my new Shun). I want to know how to do it myself.

First of all, a steel or rod does NOT sharpen a knife and it is NOT a knife sharpener. What it does is helps a sharp knife stay sharp. Using a dull knife on a steel will NOT sharpen it. In the 30 years I have worked in restaurants, I have never seen a "steel belt sharpener".

Professional chefs use a tri-stone to sharpen dull knives. A tri-stone is a whet stone with 3 stones of different coarseness. The coarsest stone is used first. The finest stone is used to put a finishing edge on the blade. The steel simply prolongs this "finished" edge. Using a steel is called "straightening the blade". The bottom part of a tri-stone has a reservoir that stores mineral oil.

I have worked in restaurants that used professional grade electric knife sharpeners. In my opnion, these knife sharpeners grind too much steel off the blade and will not get a knife as sharp as a whet stone can.
