What are the ABC's of fine dining service?
Which side do you serve food and beverages? Where should the server stand at the table? Should the blade of the knife face the customer or the other way?
Serve from the right and take from the left. Knife blades should always face the plate. Server should, when possible, stand torwards the left to be ready to remove plates... but be agile to re-fill the wine glass from the right. Never serve wine with your left hand... even if you are a lefty. When you pour you hand should always be on the top and on under neath the bottle. Take plates only when the knife and fork is on the plate.
