have you used ceramic knives?
i am a chef & i have been looking at a few ceramic knives, kyocera, asahi, boker etc. & was wondering which you consider better & why. thank you
thank you, apart from a shun kaji 10 inch chef knive the rest of my knife set is wusthof. i was mainly looking at ceramic as i am taking over wedding & functions for a resort hotel & was wondering if the lighter sharper smaller knives would be helpful for garde manger.
I'd have to contradict both answerers before me. Based on my own experience with two ceramic knives, I'd advise you to stay away from ceramic knives.
As much as I like exotic steels and blade materials today's ceramic is simply not suitable for a kitchen knife.

While it is true that ceramic knives are more wear resistant that steel that isn't the whole picture.
For one, they are very brittle. Accidental drop may result in knife breakage. And that wont' be covered by warranty.
Dropping aside, dosn't matter what you cut the edge will chip. Even if you do only veggies the edge will still chip. That material just can't take lateral loads. Few grains of sand in the vegetable and most likely you have a chip. Leeks for example tend to hold sand. Potatoes are another good example and so on.
Two - Despite manufacturers claims ceramic knives are nowhere near as sharp as quality steel blades. Those who claim ceramics are the sharpest, simply never held a really sharp steel knife. Out of the box ceramic knives arent' very sharp. You CAN sharpen them, but that's really pain, especially if you're not experienced in sharpening.
Three - Sharpening is a big trouble. I've sharpened ceramic knives out of curiosity and for practice, but overall the difficulties sharpening ceramics far outweigh its benefits in terms of edge holding. Steel holds the edge shorter time, but is much easier to sharpen and the ration is clearly in favor of the steel knives.
99% of the people won't be able to sharpen ceramics at home and either continue using it completely dull or have to send back to manufacturer, to get the same mediocre edge put on them.Or get the knife lost or broken in transit.
In short, get the good steel blade and wait until ceramic or other synthetic materials mature.
Today you will get a knife that will stay mediocre sharp for 2-3 months at home, depending on the use and then, well whatever I said above. Even if you use it exclusively for tomatoes it's still not as good of a performer as a steel knife.
Especially in a pro environment, any ceramic knife doesn't stand a chance even for a month.
You can ignore most of the celeb chefs on TV. The knives they use most likely aren't their choice, but their sponsors. Or like Rachel Ray, they use their own brand and obviously promote it despite of its really low quality, I mean R.R. Furi knives.
Morimoto and few others use really good knives and it's their own selection, some custom made too. No ceramics there either.
