what is the best brand of kitchen knives?

i just started culinary school and eventually need to get a set of knives. what are my best options? i know about hinkel and wusthof but what else is out there? these are pretty pricey. i was shocked when i saw that a single 8 inch chefs knife costs $100. buying a basic set would cost me $300-$500 and that's ridiculous imo.

Considering that you mentioned Culinary school, I am assuming you need those knives for the school and my answer is based on that.

I have not ever been to the school, but I know quite a few people who went to different culinary schools and their consensus is that it is not a good idea to bring good knives to the school. Unless you keep all your knives with you all the time or locked up somehow they will get "lost". Sad but true. Besides, it's not really good to purchase expensive knives while you are still learning.

Given all that, I'd recommend Victorinox Forschner knives. Made out of X50CrMoV15 steel, same one as in mid/high range Henckels and Wusthofs, just cheaper. Few more tips to keep in mind while shopping for your knives:

Ignore the most common knife myths and marketing BS.

Forged vs. stamped - As knife marketing tells us good kitchen knives have to be forged, and have full bolster and tang. NONE of that is true. E.g. Stamped Globals are much better performers than most of the forged mainstream kitchen knives. Stamped Forschners are made from the same steels as Wusthoffs and Henckels and I'll bet 1000$ to anyone they won't be able to tell the difference neither in edge holding nor in cutting performance.
I bought Forged and stamped versions of the same chef's knife from Global, and I didn't get anything but extra weight and spent more money on forged knife.

Full tang - Another BS, Katana swords and bowie knives are not full tang, yet they can cut through armor and leather, so I really doubt you need more strength than that in the kitchen.

Bolsters make sense only on narrow boning knives to protect your hand from slippage, but on other wider knives blade choil area does the job, bolster just makes sharpening a nightmare.

Avoid both, Cutco and Furi knives. Both are real junk metal knives, except one is really outrageously priced - Cutco. Both have rusting issues, can't hold the edge worth a dime and both have very misleading marketing. I've had Furi cleaver for sharpening/review and it was absolute junk.

Obviously, any knife that "never needs sharpening" is a shameless scam. There's quite a few of those out there too.

Another good way to spot junk knives is the use of generic terms instead of specific steel, e.g. "stainless steel", surgical stainless, hardened superior stainless etc...

As for the pricing, well good knives cost money and really good stuff is well over 100. Still, there are very good budget performers. The same victorinox Forschner, Tojiro DP line, they are solid performers and dont' cost you arm and a leg.
