What is best depends 80% on you and the other 20% on the knives.
Wusthof and Henckels are both German made knives and they use the same or very similar steels for matching ranges of knives. That is 420 class steel for entry level knives and the same X50CrMoV15 steel (another name W-Nr 1.4116) for mid/high end knives. detailed info here - http://zknives.com/knives/steels/x50crmov15.shtml
Both use cryogenic treatment for their knives, one calls it friodur, another ice hardening, but in the end it is the same cryo.
The point is, it will be very hard to determine ANY difference in their performance based on the knife steel. I do specific tests to compare steels in the kitchen, sharpen at identical angles, use identical sharpening equipment, etc, still even that's not enough to tell any difference and for every day kitchen use you won't be able to tell that.
What matters is how much you like individual knives from each maker.

Tylor Florence knives resemble those in style, but the steel is not specified. Which means only one thing, at that price it is significantly worse than X50CrMoV15.

If you are interested mainly in German knives, than I might suggest Messermeiter Meridian series. As usual they use X50CrMoV15 steel, or slightly better X55CrMoV15 steel. What's important their fit and finish is better and the edges they put on the knives are far better that anything I have seen from Wusthof or Henckel(save their Miyabi line), and I've seen a lot.
