they have twin signature, gourmet, twin pro s, twin cuisine, twin select, five star, four star, international...and so on...

Don't panic, it's much easier than you think. Don't buy a expensive knife she won't use, the if I buy it, she will use it theory doesn't apply here. Look at the 3 or4 knives she uses the most, in fact , take them with you to the store and explain yourself to a salesperson. I love my Henckeks I'm sure your mom will too. RScott
