global knife steel
i own a global knife the steel isn't easy to sharpen and i have a carbordunum stone is this okay forthe job?

I guess I have to contradict prev. poster, but anyway.

1) Don't use WD40 or any oil for that matter.

2) Global knives steel is hardened to 58HRC, which is higher compared to mainstream western knives where the best ones are 56-58HRC range. So, soft steel isn't the issue, unless your average knife is high end Japanese cutlery where 63-65HRC is normal ;)

For one, single stone is not enough. Even it has 2 different grit surfaces it's still 2. Let's say coarse and medium.
In that case you get rough edge which is hardly suitable for kitchen knives.
If your stone has medium/fine edge then it's still a problem, once the knife is dull setting the new bevel with medium stone is a pain in the neck, especially for the novice.

So, if you want to stick to the stones, then be prepared to spend time to learn sharpening using stones, i.e. freehand sharpening. And I'd strongly recommend not to use Global as your practice knife.
You do need to find out what is the grit(s) of your current stone and then add whatever is missing. Minimal setup is one stone around 500 grit to cut initial bevels, i.e. very dull knives. Then, around 1000-1200 grit and finally something above 2000. Grits in various forms go all the way to 100 000 and even higher, but unless you are knife nut I think you don[t need that level of sharpness.

Cheaper and much more novice friendly alternative is sandpaper + mousepad. Will result in nice convex edge too.

Here's the detailed description of the method and few tips to hold consistent angle during sharpening. Works for stones too ;)

If you are wondering what the convex edge is then check this one out - http://zknives.com/knives/articles/knifeedgetypes.shtml

I've owned More than a dozen Globals of different types and sharpened them using all types of sharpeners. It's not that difficult once you get the hang of it.
