What is the proper way to carve or shape a cake.Should it be dirty iced first?Should it be refrigerated first (so it's a little harder and more set)?
What kind of knife should I use?

yes it should be refridgerated and use a serrated knife. i bake mine and then put in fridge overnite, then carve, if it is more than one layer assemble the layers and then chill it overnight. dirty ice/crumb coat it after you carve it. then chill it again for a couple hours before putting the final coat of frosting on it.
