Okay supposing I've just felled a deer?
and I'm starting to field dress it, and it's not quite dead, is there a particular way that would be easiest to finish it with a knife?
It is not standard procedure to bleed a deer. That is an outdated practice that misinformed deer hunters practiced because that is what slaughterhouses do to cattle and hogs. A modern arrow or bullet, when shot into the vitals, will do a very sufficient job of bleeding the deer before you even approach it.
You can finish the deer with a knife by cutting the throat, if you choose. It is more advisable to place another round or arrow into the heart/lungs. This is the common practice. A ricochet is very unlikely unless you are shooting the deer on top of a large rock.
The smartest thing you can do is approach any downed game from behind and poke its eye with a stick. If there is no reaction, your deer is dead and you may procede with field dressing. If the deer's eyes are closed on approach, it is not dead. If you try to cut a live deer's throat, or gut it in any way, without it being dead first, you are asking to be injured. A deer has sharp hooves and is very powerful. People have been seriously injured by a "dead" deer.
Just so you know, your use of the word "felled" is correct and appropriate. It is a term commonly used when referring to an archery kill, and was used a lot in the "old" days.

Pay close attention to the question and answer. Obviously the deer has already been shot, so poking its eye with a stick is not the worst thing happening to the deer. It is a common practice to ensure the safety of the hunter, which is why I suggested it. It is impossible to be 100% sure an animal is dead by shooting it "til it is dead and not breathing." Venom asked an important and legitimate question and he deserves a truthful, informed answer from those of us who know what we are talking about.
